Ingredients for Pork in Sauce

  • 1 kg of pork for stewing
  • Salt
  • Ground black pepper
  • 30 ml of olive oil
  • 200 g of onions
  • 200 g of carrots
  • 1 red bell pepper
  • 1 bay leaf
  • 200 ml of Don Jose Onofre red wine
  • 400 ml of beef broth

How to Make Pork in Sauce

Cut 1 kg of pork into 3 cm cubes and season with salt and pepper.

Searing the seasoned pork in olive oil

Heat 30 ml of olive oil in a pot and brown the seasoned pork for 8-10 minutos. Set the pork aside and keep the pot with its oil and juices, as we'll use it to cook the vegetables.

Reducing Don Jose Onofre red wine with sautéed vegetables

Meanwhile, peel and chop 200 g of onions, peel and slice 200 g of carrots, and deseed 1 red bell pepper and dice it.

In the same pot, sauté the onion, carrots, and red pepper with 1 bay leaf for 8 minutos over low heat until the vegetables are soft.

Pour in 200 ml of Don Jose Onofre red wine and let it reduce over high heat for 3 minutos.

Blending cooked vegetables with broth to make the sauce

Add 400 ml of beef broth and cook over low heat for 20 minutos, until the carrots are tender. Remove the bay leaf and blend everything together.

Cooking the pork in the sauce until tender

Return the sauce to the pot along with the pork and its juices, bring to a boil, then lower the heat, cover the pot, and simmer the pork in the sauce for 1 hora, until tender. Taste and add salt and black pepper as needed.

Serve the pork with its freshly made sauce.
